Various cavitation technologies have been used in the food and beverage industry such as egg-processing to homogenize eggs and dairy products, in the beer, wine and distilled spirits and for edible oils such as canola oil, palm oil, soybean oil, other specialty oils.

The technology can also be used to disinfect water for hydro-cooling wash systems for fruits and vegetables on farms prior to shipment to distribution centers or stores.

Controlled hydrodynamic cavitation is able to obtain desirable changes in alcoholic and non-alcoholic beverages, flavor compound enhancements and food additives.

With the growth of microbreweries the demand for hops and the prices have increased.  We believe our technology will allow brewers to lower their cost in producing beers with less bittering hops, less dry hopping, increased hopping speed and instilling flavors from various fruits and spices in less time.

In the case of wine, we can accelerate the conversion of ingredients to make wine, add flavor and color increase the palatability in minutes, instead of years, that is needed through normal oak barrel aging.

Cavitation can significantly accelerate liquor and spirits aging allowing flavor transitions that often take years to develop to happen in minutes to days.  

AWE is currently testing various processes using our hydrodynamic cavitation reactors for obtaining desirable changes in edible oils, alcoholic and non-alcoholic beverages.
